Chicken Pesto Meatballs

A quick delicious protein option for lunch, dinner or a snack.

Ingredients

  • 1 kg chicken or turkey mince

  • 1 cup (approx.) pesto (homemade or store-bought)

  • 1 cup panko breadcrumbs (or GF crumbs)

  • ½ cup parmesan cheese (this can be omitted, just add a bit more pesto instead)

  • 2 eggs

  • Salt, pepper, and chilli flakes to season

Directions

  • Add all ingredients to a large bowl.

  • Season as desired with salt, pepper and chilli or other spices.

  • Mix everything together with clean hands TIP: don't over mix!

  • Roll the mixture into medium size balls roughly the size of a tablespoon.

  • Bake in oven at 180°C until lightly browned or put in air fryer at 180°C for 10-15 min.

Notes

Store in fridge in container can be eaten hot or cold.
