Chicken Pesto Meatballs
A quick delicious protein option for lunch, dinner or a snack.

Ingredients
1 kg chicken or turkey mince
1 cup (approx.) pesto (homemade or store-bought)
1 cup panko breadcrumbs (or GF crumbs)
½ cup parmesan cheese (this can be omitted, just add a bit more pesto instead)
2 eggs
Salt, pepper, and chilli flakes to season
Directions
Add all ingredients to a large bowl.
Season as desired with salt, pepper and chilli or other spices.
Mix everything together with clean hands TIP: don't over mix!
Roll the mixture into medium size balls roughly the size of a tablespoon.
Bake in oven at 180°C until lightly browned or put in air fryer at 180°C for 10-15 min.
Notes
Store in fridge in container can be eaten hot or cold.
