Apricot Bliss Balls

A blissful snack for when you’re on the go…

Cook time = 25 mins Servings: 15 balls

Ingredients

  • 200g dried apricots

  • 1 cup desiccated coconut

  • ½ cup raw cashews

  • ¼ cup quick or rolled oats

  • 2 tablespoons chia seeds

  • Juice and zest of 1 lemon

  • dash of water if required

  • 1 teaspoons dried ginger

Directions

  • Combine all the ingredients in a food processor and blend until smooth with a slightly grainy texture. If the mixture is too dry, add a little water and blend again.

  • Use a tablespoon portion out the mixture, then roll it into balls using your hands.

  • Coat the balls by tossing them in a bowl with extra desiccated coconut. Enjoy immediately or store for later.
