Apricot Bliss Balls
A blissful snack for when you’re on the go…

Ingredients
200g dried apricots
1 cup desiccated coconut
½ cup raw cashews
¼ cup quick or rolled oats
2 tablespoons chia seeds
Juice and zest of 1 lemon
dash of water if required
1 teaspoons dried ginger
Directions
Combine all the ingredients in a food processor and blend until smooth with a slightly grainy texture. If the mixture is too dry, add a little water and blend again.
Use a tablespoon portion out the mixture, then roll it into balls using your hands.
Coat the balls by tossing them in a bowl with extra desiccated coconut. Enjoy immediately or store for later.
